L'ente che oggi è diventato Fondazione Canova onlus, nacque nel 1853 per volere di Giovanni Battista Sartori, fratellastro del celebre scultore Antonio Canova. Fu Sartori, infatti, a costituire il Lascito Fondazione Canova, con il quale volle lasciare in eredità alla comunità di Possagno (TV) l'inestimabile patrimonio artistico di Antonio Canova, con lo scopo di tutelarlo, di promuoverlo e di valorizzarlo.
Il Lascito Fondazione Canova si è estinto nel 2005 ed una parte dei beni sono stati devoluti alla Fondazione Canova onlus. Costituita con atto notarile il 5 dicembre 2005, Fondazione Canova onlus si prefigge di conservare, valorizzare , restaurare, custodire e gestire il Museo Antonio Canova, che comprende la Casa Natale dell'artista, la Gipsoteca, il Parco, la Biblioteca e la preziosa raccolta di opere artistiche conservate nel complesso canoviano.
