Chef Gino was born and raised in Brooklyn, New York, a melting pot of the east coast of America. I am the baby boy of parents born and raised in Puerto Rico. Some time after the passing of my parents and only sister, I relocated to Hawai’i to be with my older brother. On several islands in Hawai’i, I was introduced to commercial kitchens and my affinity for cooking on the “Line” began.
After many years living in the melting pot of Hawai’i, I relocated to Las Vegas where I obtained my classical training with a world-renowned culinary program, joining the Competition Team and graduating with high honors. This experience afforded the introduction to global cuisines.
The creative aspect of cooking to me is like painting on a blank canvas. I begin with an empty plate and allow my creativity to design colors, textures, and flavor profiles to entertain as well nourish my guests. I enjoy offering my guests cultural cuisine from Latin Caribbean isles such as Puerto Rico, the Dominican Republic and Cuba as well as other neighbors.
