My exposure to the hospitality industry is through Hilton Hotel which is one of the leading hospitality and hotel group in the world . My industrial training period with Hilton helped me build my passion towards culinary studies . I worked in the north Indian kitchen where i got to learn all the basics of kitchen operations and north Indian cuisine . The tasks allotted to me in the kitchen were to prepare all the mis-en-place required before service , Preparation of basic gravies , Preparation of Indian breads , Opening and closing of tandoor section , Inventory control of north Indian section and most importantly cleaning the production areas . I also got to experience different pressure situations as our hotel was a business class hotel with more than 90% occupancy during my training period , An ISO audit was also happening in the kitchen during my training , all such scenarios helped me learn and improve my situation handling skills and most importantly how to deal with a situation without panic .
