In 1994, after graduation at Charles Sturt University he was recruited to join Hamilton Wine Group to manage existing vineyards whilst developing new ones. Taking the next step in their development Adam assisted the vineyard holdings to go from 50 acres to over 250 acres. He also assisted with master winemaker Ralph Fowler to make wine from the vineyards in McLaren Vale and Coonawarra premier wine regions of South Australia.Through to 1998, when he resigned Hamilton Wine Group to form a company Vitiwise Pty Ltd (still operating today). This company was created to cater for new clients in the wine industry develop their business's with wine growing. In 2003, at the height of its conception in 1998 the company consulted and managed over 2000 acres in four wine regions of South Australia.The company was created to consult to the Australian Wine Industry in grape growing and wine making and as a result he took on many projects to finalized them to completion. A major project being the wine region boundaries of Currency Creek, South Australia established from nothing all the way to approval on a world status with the Australian Wine and Brandy Corporation in 2001. He was responsible for the name of the Currency Creek as a wine region of South Australia which produces today some 25,000 tones of wine grapes today.Throughout this time he assisted and managed many wine making and marketing initiatives with his clients through to 2005, when he met Doctor Darren Waters and Doc Adams Wines was formed. At its height some 1100 -1200 tonnes of wine grapes was produced into ultra premium wines.Today, AJ Paratus Pty Ltd sources wine from all SA wine regions and produces into four brands Stone Valley, Big Little label, and 360 Degrees with 12 independent wine styles and products. Hill and Jacobs is the one he loves also as the wine brand represents his business partnership with mate Chris Hill. The business name AJ Paratus bears a very personal note to Adam as the word "Paratus" means ready or prepared in latin and this was and is still featured on the beret cap badge of 1st Armoured Tank Regiment he served with from 1980-86. Today, he also assists wineries to go the market place both domestic and internationally and helps to drive their business through the many experiences he has had over the journey with sales and marketing. His greatest client is Chateau Yaldara/1847 wines in the Barossa valley where he helps the team achieve their goals and aspirations domestically and internationally .
