My responsibilities also include supervise and manage running of operations for the busy and popular food outlets Noodle Bar, Willows Dining Room, Lunch and Dinner buffets, VIP lounge and retail outlets. My responsibilities also includes assisting the CDC in execution of BEOs for large groups including the famous Queen's Plate. I am directly in charge of around 60 cooks and head salads in a Union environment. My other responsibilities include recipe and recipe costing, editing and approving payroll and ordering.

Located in Niagara On The Lake, Peller Estates is one of the busiest wineries in Canada and offers one of the leading dining destinations in the area. As CDP and saucier, I was responsible for all the stocks, sauces, butchery and cooking of all the proteins. Currently in charge of garde manger my job includes planning and execution of hot and cold apps for the constantly changing Tasting Menus. The restaurant offers a seasonal a'la carte menu and a frequently changing 5 course and 7 course tasting menu giving me an opportunity to handle and cook a variety of fish and meat and highlighting local produce.

As CDP of the hotel's flagship restaurant Tiara, I was responsible for supervision and preparation of food based on menu requirements daily in a timely and efficient manner consistent with high quality standards. Supervise and direct kitchen team members and act as a team leader. Tiara is consistently been one of the top rated restaurants in NOTL on Tripadvisor.com.

Established in 1864 and located in the heart of Niagara on the Lake, this Victorian hotel is one of the landmarks of NOTL. Worked as the saucier on the dinner line for the hotel’s flagship restaurant Escabeche, I was in-charge of the stocks, sauces, butchery and cooking of the proteins. Previously, I had worked on the entremetier as well as the apps sections.

I worked in the busy banquets during the 2010 Vancouver Winter Olympics and 2010 Vancouver Paralympics Games. I was actively involved in all the aspects of preparation and serving of food to the foreign dignitaries and VIPS in the hotel as well as off-sites.

I worked on all the sections of this 380 room hotel with 2 restaurants, 2 lounges and a coffee bar. One of the restaurants, Eden is the western Canada’s only 5 diamond restaurant. I worked primarily on the dinner line for the main restaurant Primrose and Larkspur lounge.

Zees Grill is a busy 140 seat A ’la Carte Restaurant located in the center of NOTL’S old town and the festival theatre. It is not unusual for the restaurant to complete 400-500 covers daily. I worked on the lead section of the hot-line and also covered busy breakfast shifts on weekends.
