Facilitate class room training and instruction for all organizational new hires. Provide critical directives and initiatives for customer service, sanitation, safe food handling and critical thinking. Provide annual updates for training curriculum to enhance orientation program. Mentor new instructors and provide training techniques that will help training success. Bzrh - East Mall

Oversee management of Brookfield Zoo's East Mall food service operations that produce $3.5 million in annual revenue. The East mall consist of the largest restaurant in the zoo that seats 250 guest, seasonal nine head beer garden, open area food grill and deck, Chicago style popcorn tent, soft serve ice cream snack stand, Dip & Dot kiosk, open area charcoal grill, eight mobile cart locations and several venue hawkers. Employ, train and retain 150 seasonal staff, 15 supervisors, 1 assistant manager and 1 assistant general manager. Full financial accountability, annual budget and forecasting as well as profit and loss reporting and analysis. Develop and implement programs to increase product quality, customer service and positive flow through. Ensure compliance of HACCP, OSHA and all organizational programs to maintain AZA accreditation. Create standard operating procedures for all restaurant workstations and equipment to minimize safety claims and increase productivity. Partner with external vendors and internal purchasers to bring high quality products that will enhance menu selection and drive sales. Manage special food service projects including seasonal venues, corporate functions, new exhibit openings and new location openings.
