Menu, kitchen and staff development for large suburban community pub in North Leeds

Set and developed the food concept and offer for Water Lane Boathouse. Continue to oversee the running of the kitchen and develop menus, train and recruit staff, ensure all KPI's are hit. Food includes sourdough pizza, salads, burgers and a small bakery. All made in house

Development chef @ Ox Club, Headrow House I set up and develop the food concept at Ox Club and other food offers within Headrow House. Now in it's 4th year and 4th consecutive listing in The Good Food Guide and Michelin Guide.

I initially worked on the development of the Dough Boys Pizza brand. After a successful launch we have established ourselves as one of the leading pizza places in Leeds. We will be taking Dough Boys to festivals around the UK and have been looking at further sites across the UK.I have now moved on to develop the food for two further brands. 'Patty Smith's' and 'Fu-Schnikens'. Again with a view to take them to festivals and to tie in with a new street food collective.

Head chef at Forster's Bistro and tutor/assesser at the young chefs academy within Forster Community College. We work with learners of all ages, many who come from hard to reach backgrounds and we train them up to be highly skilled work ready chefs. It’s incredible some of the talent we’ve discovered since opening in January. The trainee chefs in return help us to run Forster’s Bistro so they get real hands on experience in a professional kitchen. In the Bistro itself we focus on using local suppliers from the Bradford area, taking beautiful ingredients and creating simple inspired food. The menu acts as a guideline only as everything changes daily depending on what’s good at the local market.
