My responsibilities as a food scientist include new product development for roasted peanut ingredients, specifically peanut butters, peanut butter variegates, chopped peanuts, and peanut splits. As part of product development I work with the customers in a consultative approach to develop solutions, including samples, packaging, and processes, that meet their needs from beginning to end. This includes scaling solutions from lab-scale to production and coordinating with multiple departments to drive success. In addition, I play a key role in customer audits, internal auditing, shelf life studies, and technical services. I also help maintain quality systems to include the Food Safety Plan, Environmental Monitoring, BRC Compliance, and customer documentation requests.
