20 years of diversified small scale meat processing experience has gained me tremendous insight on how to plan, design, and operate clean and efficient systems that produce high quality meats. Throughout my career I have trained many apprentices in the complete butcher trade and enjoy sharing the knowledge. My mission is to strengthen the local food economy by direct stakeholder engagement, training, and consulting.
