My travel also includes site visits to all the Mitchell's Fish Market properties where I am involved with hands on training and development of management and staff and ensure training processes are followed. I became the Assistant General Manager in 1999 followed by a year working in the kitchen as a Senior Kitchen Manager before becoming the General Manager in 2002.

With encouragement from the management team, I enrolled in the supervisor growth program and moved into a salaried restaurant manager within a year.
