Focused on the reduction of sodium, as part of the Center for Disease Control’s “Sodium Reduction in Communities” program.· Development of Food Products Intended for Use as Complementary Medicine:In partnership with the Children’s Hospital of Philadelphia, developed a number of food products with therapeutically functional characteristics, such as stool softening properties and electrolyte replenishment.· Promotion of Sustainable Frozen Seafood Products:In partnership with the World Wildlife Federation, conducted research and promotional outreach focused on increasing sales of sustainable frozen seafood in grocery stores.· Editing of a Reference Text:Contributing editor for We Eat What? (Publication forthcoming in 2018), an encyclopedic volume that showcases unusual and interesting dishes consumed in the United States.
