Responsible for the leadership & management of distillery production. This includes bottling, maintenance, distilling, aging, warehousing, and ensuring consistent quality spirit is produced to the highest levels in a safe and secure environment• Oversee the entire distilling process, including mashing, fermentation, distillation, & barreling• Preparing spirits for release by filtering to spec, proofing to TTB standards, and maintaining bottling line operations• Constant research & development of new product, improvement to existing product, and system efficiency upgrades• Developed and produced Wheat Penny wheated bourbon, winner of Double Gold (SIP Awards) and Gold (Proof Awards) Medals• Manage production of multiple SKUs, including Cleveland Underground Black Cherry, winner of two Platinum medals, three Double Gold medals, and nine Gold Medals• Created and implemented SOPs to ensure comprehensive documentation and review of procedures• Manage weekly production and labor schedules, utilizing a variety of spirits industry-focused software, and coordinating product throughput with sales and logistics• Manage all supplies & inventories with regular reporting and tracking, ordering raw material and supplies as needed per production plans• Maintain effective production by properly maintaining equipment and utilizing maintenance schedule• Work with contractors & engineers to scale operations from current 5,000 square foot facility to 25,000 square foot visitors attraction and official landmark• Led production of hand sanitizer during early days of COVID-19 in conjunction with the Cleveland Clinic• Act as distillery ambassador at various functions and tours, and regularly host virtual tastings and events
