I provide custom food safety training and audit services for anyone in the industry. Whether you’re a seasoned entrepreneur or opening your first cafe, I can support you in building a safe, compliant, and profitable operation, including business model changes due to COVID-19. With my background as a chef and restaurant manager, I can also elevate your creative endeavors—menu design and nutrition guidance—as a trusted partner in your business.I am the first Operations Food Safety Manager at PCC Community Markets, a consumer-owned food co-op and respected Seattle institution with 15 retail locations. It takes time to steer such a massive ship, but I wasted no time in advocating for smart process changes, empowering frontline workers and managers with resources and training, introducing new technologies and tools, and forging a pathway to sound, high-quality operations. I accomplished all of this while weathering tremendous company growth. I am proud to see the continued positive impact of the food safety culture I helped to build. My diverse career has given me a hands-on understanding of the importance of proper training, process and procedure evaluation and verification, document controls, and a continuous improvement mindset. I served as a health inspector before pursuing and completing a culinary program and working in a Three-Star Michelin restaurant in France, then selling specialty foods (cheese, charcuterie, and wine) in the UK, then finally teaching food safety at the university level. With knowledge of the art, science, and business aspects of cooking, I can successfully help to run compliant food businesses while navigating ever-changing guidance and regulations. I can confidently draw on real-world experience, as well as my industry contacts and resources, to bring projects and programs to fruition.
