In my ten years running the private events business in Fallon & Byrne, I have been responsible for every facet of the commercials and operations which made this the most profitable department within the business. I worked closely with the marketing team to rebrand ‘The Ballroom,’ improving and revitalising the offering post-Covid, and helping to create new brochureware, photography and digital presence. • Responsible for all new business enquiries and client service management from initial enquiry to post event. • After three years, I increased turnover by 30%, adding an additional 30 weddings per year and developing a major corporate events business with a roster of regularly returning blue-chip clients as well as DMCs and PCOs. • As head of the department, I am responsible for recruiting, training and developing a team of 15, designing food & wine menus in collaboration with executive chef and wine buyer, and all financials including invoicing and accounts reconciliation. • I ensure that all targets are met across sales, payroll and margins, and report directly to the board of directors.

Working alongside a former director of Sherland Entertainment, we provided a consultancy service to a variety of clients and worked closely with them to offer front-of-house solutions for existing establishments as well as launching new ventures.Engagements included:Weafer & Cooper, Glasthule, Co. DublinI spent seven months spent setting up and running a 110-seater bistro and deli in Glasthule. After five months of trading, I hired a general manger to take over the business.The Irish Film Institute, Temple Bar, Dublin 2I carried out a nine-month consultancy project to increase sales and improve customer service in the café and bar, leaving the Directors of The IFI with a better business model having hit a revenue increase of €50k during the period. I retrained staff to upsell and increase table turnover, redesigned roster to control payroll and created themed nights to attract new clientele. The Wright Venue, Swords, Co. Dublin I worked for six months on the launch of this one-of-a-kind “super club” and entertainment centre in Swords. Under the umbrella of the marketing team, I created entertainment packages for the team, managed and oversaw events, and liaised with high profile clients.
