I spent 5 weeks in the back of the house training under Mike Ingram, the head chef and Kitchen Manager of BrickTop's Mcewen. I experienced and worked in every role, from dishwasher to head grill and line coordinator, to kitchen manager. The last 3 weeks of my internship were spent in the office in the front of house shadowing the General Manager Marc Drosner. I learned how to open and close the restaurant along with all financial and technical aspects in between.
