I managed the hospitality offer at Tillingham in East Sussex for over 3 years. Under my control were 13 bedrooms, a 60 cover restaurant, a 90 cover pizza restaurant, bar, shop (physical and online) as well as daily tours & tastings. I assumed full operational accountability for financials, service delivery, maintenance, H&S and staff well being reporting directly to the board or directors. In January 2022 we achieved a Michelin Green Star for Sustainability & Gastronomy and in January 2023 entered the Square Meal Top 100 Restaurants at #55. I have grown the business from a 4 day a week operation when I started to 7 days a week brought the business from loss making ti profitability.

F&B Director for Cultureplex opened in Manchester in 2019. Responsible for all aspects of service delivery, compliance, team morale and day to day operations of this 18000 square foot site comprising a cinema, lounge, restaurant, coffee shop and events block.

Kettner'S Townhouse

I was the opening General Manager of Kettner’s Townhouse, comprising a 33 bedroom hotel, 70 cover restaurant and two bars. I was responsible for all of the day to day operations and service delivery of the hotel, restaurant and bars leading a team of 9 managers and just over 100 staff. I reported to the UK Director of Operations regarding P&L performance and had oversight of budget management and cost control.

Margate & Liverpool

For just over a year I was solely responsible for all aspects of the restaurant operations in my own business. Kitchen operations were run by my business partner chef Jackson Berg. I commissioned architect Asif Khan to come up with a ‘movable’ restaurant. The concept was a structure made from scaffolding housing a 50 cover bar and restaurant. We ran for 4 months in Margate during the summer of 2016 and 9 months in Liverpool following on from that.
