I was La Colombe's senior waiter for many years. I was responsible for training new front-of-house staff. I looked after guests from all over the world while meeting their high expectations given that La Colombe was rated in the Top 3 restaurants in South Africa and often featured in the Top 50 in the World.

This included making sure the kitchen pass was operating smoothly, picking up any balls that were dropped and making sure that overall guest satisfaction was at its absolute highest.
