In my most recent role, I crafted and innovated enticing food and wine menus to mirror the culinary identity of the establishment, ensuring they are well-balanced, seasonally appropriate, and cater to diverse clientele preferences. It was I who led the sourcing and curation of an extensive wine selection, considering quality, price point, varietals, and regions, whilst fostering relationships with distributors, producers, and suppliers to maintain high standards. Moreover, I trained staff to elevate the dining experience and oversaw organisation, storage, and inventory of the wine cellar. In addition, I implemented effective cellar management practices to uphold wine quality and integrity, whilst managing P&L responsibilities.
