Managed two upscale Italian restaurants specializing in the cuisine of Northern Italy. Partnered with the owners of North Park Center to revive and renovate an existing high-end restaurant and Market. Planned and directed the renovation and build out of additional footage to accommodate a casual dining element and Italian Market.

Managed three cafe units located in Dallas Texas, Houston Texas and Costa Mesa California. Traveled to each location on a quarterly basis, hired and trained a staff of 100. Worked with kitchen managers to develop menu and daily specials. Managed our packaged food division.
