Championing all Quality Improvement initiatives, implement & ensure understanding of the importance & value of utilising quality tools in continuously improving our key strategies to achieve excellence relating to corporate culture & performance of the hotel. Some of these include maintaining a high level of professional appearance, establishing & maintaining harmonious working relationship within the hotel, undertaking all practical measures to identify, assess, control & monitor workplace risks to health through the establishment of systems for the identification of hazards.The use of Defect Reporting Process which continuously encourages the reporting & recording of defects from all sources on a daily basis. Ensuring all guest defects are resolved prior to or after guests have departed the hotel. Analysing reports & reducing the recurrence of trend defects. Performance Monitor uses individual guest & event survey analysis & communicates the results throughout the hotel. This is then partnered to provide leaders with PM operational reports & analysis to meet/exceed goals. All PM Guest Alerts which includes all types of communication like comment cards, verbal feedback, stay surveys & social media are monitored, replied to & resolutions are recorded. The final part of identifying defects on daily Hotel walks to discuss & observe Quality Improvement opportunities.My role also includes training for all areas of the hotel. I co-ordinate & conduct the new hire orientation program, this ensures that all starters receive a comprehensive overview of their responsibilities, the hotel’s organisation, hotel facts, policies & procedures, rules, regulations, & ensure that training is cascaded to each department via departmental trainers, observe & conduct on-the-job certification programs training both internal and external.

My role with Corporate Training & Recruitment Solutions, I had short-term contracts using all my skills in hospitality, management, and training managing the projects. I consulted in all things especially pubs/bars/restaurants.In my position with one group I was hired to manage all the beverage activities for the three sites, and manage all the training activities for new staff, current staff, the development of managers and produce all the manuals. I have negotiated, planned and developed the new beverage list, both alcoholic and non, I have brought in suppliers and negotiated better terms for the group, which has increase beverage GP by 17% in a short period. I have created the new staff welcome pack and induction manual, waiter training manual and carver training manual. I have produced a supervisor and mangers training program to develop and nurture the current staff into more senior roles.

I managed the daily running of the main canteen providing food service to all ranks and classifications of the military and civilian staff within the military complex at Enoggera serving over 2,000 meals each day. On appointment to this position I was responsible for and tasked with not only ensuring guests satisfaction, but also improving sales and efficiencies, dramatically increasing the quality of food and service to ensure that all customers receive an improved experience regardless of rank or classification for satisfaction with all components of food and service. As well as being responsible for providing strategic direction and leadership to a team to improve quality, loyal customer base, productivity, P&L accountability and general operations.

responsible for over 4 different outlets covering both food and beverage, including the casino’s exclusive high rollers’ rooms and private gaming areas as well as the bar associated with Jupiters Theatre. I was directly responsible for ensuring all outlets ran efficiently and with a focus on cost effectiveness. While several of the outlets trade 24 hours a day, all require adherence to the multiple policies and procedures for food safety set by the casino to comply with all government regulatory requirements.

Manager within food and beverage Division in the world-renowned Harrods Ltd in London overseeing the daily running of multiple outlets.

I worked in the Lobby Lounge & Library Bar serving “Ritz-Carlton’s” famous Afternoon Tea. I provide lateral service to the other outlets including the signature fine dining silver service restaurant which had won some of Dubai’s most prestigious dinning awards; an all-day dining restaurant; banquets department; pool bar and restaurant; and the Executive Club Lounge with its dedicated members bar and pool facilities.

This was a dual role as Corporate Sales Manager for Rydges Lakeside Hotel and Catering and Conferencing Manager for the National Gallery of Australia. In this role I managed all the elements of the functions from a boardroom meeting to weddings, cocktail parties and the major launches in the Gallery as well as Rydges Lakeside. These events ranged in number from 10 to 1000, from boardroom, theatre to banquet and cocktail.
