Centre For Sustainability Leadership - Fellowship Leadership Program
My take-out, go-forward project from the Centre for Sustainability Leadership programs was "to create the most sustainable cafe/restaurant group in the world". I discovered and fell in love with Schumacher College during my CSL year which led to me completing my MA in regenerative economics and creating my Future of Hospitality initiative which is probablymy delivery of the CSL go-forward project.

12-year entrepreneurial journey founding my own multi-site group. Multi-millionaire after 5 years. 6 businesses, commercial property, freehold 8 apartment accommodation complex. Heavily involved in my community, arts, music & film. Developed innovative eco-friendly sustainable concepts. Burnt out as a result of events that felt like a cross between The Sopranos and House of Cards. 5 hospitalisations, cost me millions and almost my life. I'm patient and karma is real.

Invited to be a board member and initiated strategic review. An Eco-centre seminar in April 2009 inspired me to create 'Slow Down', Australia's first paddock-to-plate restaurant.

Invited to become involved in the creation process of a new tourism association for St Kilda by Council economic development officers and business peers. Then asked to become president by my peers. Developed what might now be described as a regenerative tourism strategy which was signed off by a full meeting of the City of Port Phillip Council and supported by state government tourism agencies.

I was honoured to get the opportunity to complete the Melbourne Tourism Industry Leadership Program (MTILP) whilst I was president of the St Kilda Tourism Association. An excellent industry program.

Having bought a business in St Kilda in Dec 2001, I became involved in my local chamber of commerce & was elected president in Dec 2002 being re-elected 3 times between then & the end of 2006.Acland Street was suffering from an invasion of High Street brands in 2002 and 2003. Independent traders were finding it more difficult to meet the increasing rents in the street. One of the strategies we ran in 2003 was to attempt to get City of Port Phillip (CoPP) to support an attempt to "influence" the business mix in the precinct. We wanted to identify businesses the local community wanted - let's say butcher, baker & candlestick maker. Then the traders assoc would attract an independent candlestick maker through the candlestick maker industry association. CoPP would give 3 years free business rates & fast-track processes such as signage permits for A frames etc. We'd warm up landlords to signing up businesses the community wanted. The rest of the businesses would be happy to have a new business that locals wanted & everybody would promote the new business - easy! The CoPP CEO was very supportive of this strategy, but former Cr Dick Gross, who was Mayor at the time, prevented it happening. If we had been able to attract just 2 businesses a year, 12 years later the street would look very different than it does now!In 2006, the St Kilda Triangle fiasco 'happened'. We led a campaign to make the community aware that CoPP was likely to build a shopping centre & supermarket (we nicknamed it Chadstone-by-the-Sea) on the Crown Land car park next to the Palais Theatre. CoPP was clearly trying to get bulldozers on site before anybody realised what was happening. Despite the Mayor & CEO remaining tight lipped about what was going to be built, saying that commercial confidentiality prevented them saying anything, we discovered the scale of the development and 9,000+ locals joined an online campaign (pre-Facebook & pre- Unchain St Kilda) to slow CoPP down. Ceo Of The Hospitality Management Company, A Subsidiary Of Lion
Headhunted from London to Melbourne as CEO of a multi-site hospitality subsidiary for Lion (Nathan). Set up from scratch by acquiring 45 individual businesses within 8 months and by stealth in the first few months. Built to 1200 staff and $250m revenue. Recruited senior exec team, area manager team, site GMs and set up business systems and tech to support the new company. Exciting project.

Approached by GrandMet after 2 years with Bass. Found GrandMet refreshing, innovative, entrepreneurial and allowed autonomy. Bass had been traditional, restrictive, slow to change and controlling. As an area manager I was responsible for about 20 managed venues, so all aspects of the business, from appointing the right managers to ensuring the area profit target was delivered. I did well. I ran 3 areas over a 3-4 year period before being further promoted to a marketing role at head office. Following the reverse acquisition of GrandMet's 2500 strong pub estate in 1993, I carried out 2 roles as the Marketing Manager for 800 London pubs and the Marketing Controller for 1750 pubs across the UK. Learnt a lot about corporate politics during this period.
Area Business Manager
Bass was the UK's 13th largest company and I secured a position as a graduate management trainee, the youngest one ever to be given a managed venue area, at the age of 23. The learning process to get there was interesting to say the least and character building. Bass at that time was old fashioned and very traditional in it's approach. It was a big company, running breweries all over the UK and 4,500 pubs across the UK. Some great strories to tell about this period, but will leave for the book!
