Providing inspections and consultation in all aspects of Environmental Health and Food Safety on behalf of the cities in the San Antonio Metro Area. Working with governmental administrative staffs to ensure the health and safety of citizens, and compliance with state laws.

Instituted a comprehensive HACCP-based food safety and quality program from the ground up, in a 128 unit restaurant chain featuring a varied and extensive menu. Currently manage third-party and company audits of retail, distribution and manufacturing facilities, where applicable. Created, applied, and continually update company food safety standards, based on FDA regulations, good manufacturing practices, and brand protection. Work well one-on-one and on teams, integrating food safety and quality functions with operations, training, risk management, manufacturing, purchasing, and other internal departments. Responsible for creation and implementation of internal food safety audit standards, manager food safety training and certification programs, review and follow through of retail unit regulatory inspections, and product testing program. Work with culinary team instituting HACCP in new recipe development. Work with Purchasing Director to maintain superior pest control services. Have developed strong relationships with regulatory agencies throughout our trading area. Travel extensively nationally in the position.

Achievements in this area included building positive, effective working relationships among State restaurant associations, leading restaurant chain QA executives, and FDA and State regulatory officials, to promote industry-oriented food safety programs. My work regarding various food safety issues was widely published and quoted during this time. In addition, I was a speaker at many state and national regulatory-industry conferences regarding food safety, HACCP, Hepatitis A, and other related topics.
