With over 12 years of experience in Toronto starting at the age of 16, Dento has worked from small one on one training with lamination to large national events involving quick planning under pressure with not much time. Specializations are in lamination, bread, doughnuts, and general yeasted dough. Dento is also a multidisciplinary man and also has experience with Kimchi on a professional scale, soda making on a professional scale, ice cream making, along with some prep cook work. Dento has worked in many places in many different roles and has a wealth of knowledge on equipment, ingredients and technique.Dento is a queer transgender man of colour and truly stands for inclusive workplaces.
