To take Store inventory on a monthly basis and prepare variance report.To take month end inventory of all outlets and prepare a monthly closing statements.To control on spoilage and wastage, spoilage has to be verified physically and report has to be made for the same.To take Mini Bar inventory and make variance report.To ensure that all requisite entries in the MMS are complete and up to date.Recipe costing of all menu items.To prepare monthly risk purchase statements and debit to the suppliers.To check the sales, sales summary, bills received discounts, voids, and cancellations, missing KOT / BILL etc. and take the required action.To conduct regular inventories for the concerned areas on Controls.To check all the venders invoices (Food & beverages) with the MRR and process them for payment as per the guidelines laid down.To get the measuring scales and peg measures calibrated as per the schedule
