During this time he completed a fantastic project for the Center for Human Nutrition on how a family of four could eat nutritionally sound, low cost meals over the period of a month. He created the varied menu, conducted the nutritive analysis and costed out the menu during this time. His project is being used to teach low income individuals, receiving food stamps how to eat well and healthfully on a budget. His work on this was exceptionally well done and very valuable tool. During this time, Dan also volunteered to prepare a meal for a delegation of Chinese nutrition professionals. Not only did he prepare a delicious and healthy meal, he also engaged with the Chinese professionals to learn about their issues with obesity and diabetes in China and offer input to how we as Americans can alter our cooking habits and impact the obesity epidemic locally. During this evening, he showed his nutrition/culinary knowledge and ability to interact well with others. It was a pleasure to have Dan.
