I was employed by Duration to manage all aspects of beer production, from brewing and conditioning, through to packaging. I was trained in a rapid, on-the-job fashion in all of the necessary processes in accordance with the company’s SOPs. Being a member of a very small outfit, my abilities in working autonomously soared, but it made me realise that I miss the more collaborative approach to creation associated with larger teams. Being solely responsible for monitoring data regarding numerous products with different on-going fermentation and maturation schedules to coincide with a constant packaging routine, also boosted my organisational skills.

My daily duties varied depending on my weekly shift pattern and the number of brews that day. Weekend work was also required, which on top of the two hours commuting and 42.5-hour working weeks, proved to be very challenging. Due to the fast paced nature of production work at such a large scale, the time management and control of multiple on-going processes requires a great level of communication and unity amongst the team, as well as an innate ability to multitask and work to short deadlines. Very quickly I learned to lean upon and trust my colleagues to complete their necessary tasks, whilst managing my own in a synchronised manner. This role emphasised the huge importance of team fluidity.

As one of a three-person brewery floor team, with such a relatively large output, my working days were spread across all aspects of production. Outside of working hours, I performed weekend checks, ran brewery tours and attended promotional events, to both represent Redwell and to discuss the brewing process in open forums. Given the nature of expending as many skills as possible from such a small team, I also had a number of opportunities to write articles for local craft beer festivals and publications on behalf of the company. I declined the Head Brewer position twice whilst at Redwell, setting my sights on gaining further experience elsewhere.

This position gave me my initial understanding of working within a brewery. Under guidance, I conducted entire brew days, developed my knowledge of brewing materials and learned the basics of racking into casks and the adjoining pub’s cellar tanks. This role was 100% voluntary and I committed 4 days per week to it, alongside my bar job.
