About Dragoș Voicu
Hej! I am a Romanian-born, Malmö-based food engineer with a strong passion for product development, quality control and research within the dairy industry. I hold a Master's in Science Degree, in Food Technology and Nutrition, as well as a Bachelor's in Chemical Engineering, with a focus on food chemistry and biochemical technologies. My proudest achievement to date is being awarded in a university department's competition about product development in food. Together with my team, we developed a vegan alternative to fish fingers which we named “Ocean Sticks”.Outside of the world of food engineering, I am a portrait photographer with more than 10 years of experience under my belt at various events. During this time, I have also held 2 private exhibitions. I also love travelling, discovering new places and reading history.

General Manager
During my time spent as a hostel manager in Bucharest, Romania, I had the great opportunity to spend time with people from all over the world meeting different cultures and working with international volunteers. This experience enhanced my leadership, and communication skills, but also my ability to pay attention to small details and solve eventual problems.
Research Assistant
I had the opportunity to enhance my laboratory skills, my analytic thinking and my attention to detail working as a research assistant for the project called ”Methods for Authentication of Cheese Adulteration with Exogenous Fats”. It was presented at the 20th Romanian International Conference on Chemistry and Chemical Engineering (RICCCE 20), in August 2017 by my coordinator Prof. PhD Eng. Cristina Todașcă. I also had the honour to present the work as ˝Tracking down falsified fermented cheese with non-milk fat˝ with a poster at the 14th International Conference ˝Students for Students˝ (ICSFS 14), Cluj-Napoca, Romania, April 2017. The main objective of the research was to establish a fast and reliable method to detect falsified fermented cheese with non-milk fat. In order the reach this objective some specific steps have been done: a collection of the cow’s fermented cheese samples from different areas of Romania. The second step was fat extraction from the samples, by means of the Soxhlet procedure. Next, the GC/MS standard test was used to check the milk fat’s FAP (fatty acid profile). The final step was the development of a rapid method based on NMR spectroscopy. The obtained results confirmed that the NMR method is a faster way to determine cheese adulteration with non-milk fats, determining the optimal ratio between long and short-chain fatty acids.
Research Assistant
During this short but very interesting project called ”Influence of Raw Materials on the Rheological Properties of Yoghurt”, I had the opportunity to develop my laboratory skills regarding the mechanical properties of yoghurt being supervised by Assoc. Prof. PhD Eng. Alexandra Mocanu. Our tremendous dedication was observed at the Student Scientific Session held by the Faculty of Applied Chemistry and Materials Science, University POLITEHNICA of Bucharest, 2016 where the project obtained an honourable mention. During experiments, different samples of cow milk with 1.5% and 3% fat were inoculated with different quantities (4g or 8g) of cow milk yoghurt (0.1% or 3.5% fat). It was observed the time needed to obtain the desired pH for yoghurt. Also, tangential stress and apparent viscosity were observed. The same tests were done with goat milk and 4% fat, goat milk yoghurt.
Intern
My internship at Danone Romania was a wonderful opportunity to understand how the whole yoghourt-making process looks like. I had the chance to visit also farms in southern Romania that provide Bucharest's dairy plant with milk. The main focus of my internship was to learn about product quality. It was fascinating to learn about how important are the tests in any step of production.
Research Assistant
During this short project called ”Oscillating Reactions, Determination of the Strength of Antioxidants” I had the opportunity to develop my laboratory skills in basic operations. The project was done with Jasmine Zaharia and Elena Voicu being supervised by Prof. PhD Eng. Florina Dumitru and Assoc. Prof. PhD Eng. Gabriela Alexandru. The project investigated the applicability of the Briggs-Rauscher reaction in order to characterise the strength of antioxidants from different beverages. Our effort was rewarded with an Honourable mention at the Student Scientific Session held by the Faculty of Applied Chemistry and Materials Science, University POLITEHNICA of Bucharest, 2015.
