Set up a café and gift shop from scratch at Spurn National Nature Reserve. This included sourcing all menu items and retail lines. Most fresh produce was local and sustainable and I built up an excellent relationship with a number of artisan producers in the region. I stocked a lot of the products I used on the menu for retail and this proved extremely.
