R&D Team leader in Fermentation technology : Within the corporate R&D of Lesaffre I lead a research team whose objectives are to study the industrial potential of new microorganisms (yeast, bacteria, mold, algae, archae …) and develop new fermentation processes from lab to industrial scale. The processes aim at producing active biomass, metabolites like aroma or active pharmaceutical ingredients or fermented substrates. The fields of research are aroma production, antioxidant, mold inhibitors, pre and probiotics.Project Manager :At the heart of the Innovation strategy of Lesaffre, I am in charge of developping new product and services by implementing project management methodology. Starting from a new concept, I define and plan the project to fulfill the specifications and delivery times and validate the budget. Then I manage the project implementation thanks to a multidisciplinary team to transform the concept into an innovative product or service. Within the research process department of the R&D center, my mission was to develop new processes for yeast production to improve biomass yield and process productivity, use new fermentation substrates, select new strains and adapt the yeast’s quality to client’s applications. The fermentation step had to be designed to obtain product with a high fermentative activity. The downstream processes (concentration, washing, drying, packing) goals were to concentrate and preserve this specific activity during storage while keeping it immediately available. In a team, along with two technicians, I was first in charge of metabolic studies to get the fundamental knowledge that is required to define the new processes. In a second step, I developed the innovative process at a pilot scale with fermenters from 1 to 200 L, and supervised the scaling up to industrial level in close collaboration with the factory’s teams

Study of the metabolic response of the yeast Saccharomyces cerevisiae induced by transient change of environmental conditionsThe fermentor (chemostat) was used as a tool to control the yeast physiological state and quantify precisely its metabolism in terms of metabolites production, biomass composition, respiratory activity. Special emphasized were put on on-line measurement during fermentation which led to the development of a probe for on-line biomass concentration measurement (E. Poilpré et al, Biotechnology Letters 24: 2075-2081, 2002). We have demonstrated that the yeast’s respiratory capacity, and its trehalose and glycogen content played a key role in the mechanism that controls its fast adaptation to weak acid, pH and CO2 stresses.
