My research involves interdisciplinary work in the fields of analytical chemistry, human nutrition, and the gut microbiome. I use non-targeted mass spectrometry to elucidate the biomolecular composition of foods, with particular focus on phytochemicals, in the context of human health and the gut microbiome.
