• To ensure that company standards and procedures are followed in the bar operations.• Responsible for ensuring that the beverage sales forecasted for bars, lounges, and restaurants on the ship are met and exceeded.• Prepare, monitor, and adjust the schedules for the staff, in close coordination with the Beverage Manager, to meet demand and guest service expectations.• During service ensure that the staff are knowledgeable about the menu, and daily specials, are courteous to guests, and are following correct S&S procedures, correct glasses, garnishes are used, checking IDs, etc.• Ensure all private parties are set up as per the company's standards 30 minutes before opening.• To work closely with bartenders and all staff in ensuring that all bars are stocked as per their par stocks, communicating shortages to all on time, and ensuring that all drinks are mixed as per the company specifications and recipes. • Ensure that weekly inventories of all bars and soda machines are conducted correctly, To order the correct amount of bar items - liquors, wines, beers, etc. weekly observing the budget.• Responsible for maintaining bar costs and verifying bar requisitions.• To perform all employee-related duties such as - training, fair scheduling, 15% payout, performance appraisals, etc.• Ensure that the operating inventory of bar uniforms is always maintained and order new uniforms as and when required.• Ensure compliance with all local, state, and federal laws and liquor licensing regulations.• Issues maintenance work order requests and ensures that all equipment and furniture is in proper condition and meets the safety standards as well as follow up on pending ones. • Ensures all daily bar operations follow and are compliant with all Public Health rules and regulations.• Conducting USPH inspections with the shipboard management team, ensuring 100% compliance, including equipment status and maintenance reports.
