I give daily briefs and debriefs to my team to help me to drive, coach, train and inspire them. Daily banking, managing compliance, stock control and achieving KPI targets are all part of my role. High standards of cleanliness are maintained throughout the store at all times as is a welcoming and engaging atmosphere. Dealing with difficult customers and diffusing potentially awkward situations are areas in which I excel, as is a positive, friendly approach to staff and customers alike. I have a ‘can do' attitude to work which has been acknowledged by Senior Management on many occasions.

I prepared and organised 30 - 50 carvery covers per day - many more at weekends. Staffing recruitment and rotas were my responsibility together with catering for buffets, parties and other weekend functions.

As a sous chef I learned all aspects of kitchen and catering management taking on the position of kitchen manager when the vacancy became available. I had sole responsibility for staffing, ordering of stores and handling third party contract needs. I set the standards for cleanliness ensuring all staff maintained impeccable levels of hygiene to avoid unnecessary issues and setbacks. Requested to become part of the implementation team for new and failing establishments I travelled around the south of England improving performance by facilitating and training team members in policies, procedures and expected service levels. My main priority regarding cost and margins was to turn around failing gross profits, educating staff to take responsibility and pride in their efforts and ensure performance levels were embedded in the working ethics.
