Also leading one of the most prestigious culinary and hospitality schools in the world, which is based in central London as part of WKC.Having had a dynamic career in the hospitality industry as a chef and pastry chef, I continue to work in my specialist subject of chocolate and patisserie within my role as a UK Chocolate Ambassador for Barry Callebaut (UK) and use this to influence our students and the wider industry to meet their aspirations.With over 27 years of experience in the education sector, this has enabled me to work in all aspects of education and become a leader in the field of culinary, hospitality, vocational, HE and FE education. I have written new national qualifications with Awarding Organisations and work within the private, FE and HE sector. I have developed an entrepreneurial and scientific base for all programmes and generate substantial full cost income which is both sustainable and has healthy growth each year. I have managed and lead teams in Grade 1 Ofsted Faculties and Grade 2 FE establishments. Recently leading on the turnaround of CCCG from a Grade 3 to a Grade 2 institution.As a published author, my text books have pioneered the educational term of 'blended learning' and have carefully matched classical techniques with modern, up-to-date methods for students and chefs to follow.
