Dedicated, hard working and passionate pastry chef with a BSC (Hons) in Baking and Pastry Arts Management from TUD. Always striving to improve my skill set and broaden my horizons. I have a passion for the trade and enjoy experimenting with new techniques and flavours. Previous experience varying from a 5 star pastry kitchen to industrial bakery environments as well as running my own part-time cake company 'Perry's Pantry' for several years. I began my career by setting up my own home run cake company 'Perry's Pantry' in 2014 offering a range of handmade desserts specialising in celebration cakes. From there I continued on to work in various kitchens and restaurants progressing to a position in one of Irelands top 5 star hotels, then to head baker for one of Ireland’s leading healthy snack food companies managing production schedules, NPD and daily operations. Currently Pastry Sous Chef at a global social media company managing a team of 4 pastry chefs producing 1500-2000pcs a day catering to a range of different dietary requirements ranging from gluten free, vegan, Halal and dairy free.
