As Youeni Foodstore, Surry Hills, was transformed into Foundry, rebranded by Youeni Agency and manager Ky Haus, I worked as part-time Chef as the menu was revamped to reflect a street-food vibe, still with a consistent focus on fresh, local produce and creative flavours. During my time at Foundry I worked with both the Youeni Team, and a new team as the Surry Hills store changed hands. I also worked with the new owners to provide customers, who were predominantly on-the-go businessmen and women, with new, healthier options which catered to a desire to have access to quick, yet still nutritious and imaginative, meals.

While working with the team at Youeni, I performed the role of Host/Waitress initially and moved to the role of part-time Chef in the latter stages of Chris Starke's ownership of both the Darlinghurst and Surry Hills branches. While working as Host, I welcomed customers to the cafe, provided them with both counter and table service, and processed POS payments. I also filled the role of Kitchen Hand at the cafes at the same time as working as Host, helping with food preparation and washing and cleaning all service equipment, as well as preparing coffees for customers. I subsequently moved into the position of Chef, managing food production and presentation, preparing both take-away and dine-in meals on order, and enhancing my coffee preparation skills alongside Youeni’s great baristas. I also managed ordering of produce for the Darlinghurst store before its sale, and after moving back to the Surry Hills store, managed ordering of dairy and fresh produce, regularly corresponding with suppliers. My time at Youeni was a great learning experience, as I learnt many new skills, such as the key elements of being a good barista and giving great customer service, as well as giving me a new perspective on great food. I also gained new insights into team leadership, team management and working within a team to best present a cohesive, enthusiastic workforce. The opportunities that the team at Youeni presented me have and will prove invaluable.
