Led a small team in charge of production scheduling, ordering, procurement, adhering to our FCP and Quality Assurance. Our main client was My Food Bag, supplying sauces to their bags ensuring that we deliver on time and adaptable to their requirements. We also have a range of retail products we supply major supermarkets such as Farro, New World and Countdown. Some tasks also include, proof reading labels, ensuring we declare allergens, record keeping, costing and rostering of staff.

I was approached by my first employer in NZ to return back to Delamore Lodge as Sous Chef. In charge of menu planning, upkeep of the kitchen, stocktaking and out of my own initiative, started doing P&L to keep track of our cost vs revenue of the F&B side of the business.
