The Alchemist focuses on creating theatrical serves for their food and beverages. Previously I ran a speakeasy style bar in our basement bar, building a team, curating a menu, and building ambiance with music playlists. I tracked sales of drinks and continuously modified the list to increase guest satisfaction and spend per head. I have taken cocktail development through the whole process from idea to being in the guests hands – including costing, allergens, product sourcing and physical menu design. Since then I have created drinks across the breadth of our international company including: the main menu, brunch specific, terrace specific, automatic drink dispensers, and limited run activations.We took the decision to merge the speakeasy with the rest of the bar. Along with being involved in drink development I manage both bars; building a team, controlling stock, performing H&S audits on other venues, and testing new bartenders across the company to ensure they meet our high standards.
