Co-founded Ragamuffin with my wife, Danielle in Sydney's inner west in 2009. We began steaming muffins in our home then baking them fresh at farmer's markets on weekends. Opened the Ragamuffin bakery on Norton St, Leichhardt in late 2011. Introduced our own unique style of English muffins in 2016, which quadrupled our sales. Closed the bakery in 2022 for a fresh start in Melbourne. Decided to take a break from design work and start a career in food from the bottom up. At the Belgian Beer Cafe in Ponsonby (now closed), I began my professional food journey as kitchenhand and cold larder. Learnt the basics of how restaurant kitchens operate. Prepared a lot of different food items. And de-bearded a LOT of mussels... like, 10s of '000s of mussels.
