I joined the team of a small, family-owned Cuban restaurant on the ground floor and was quickly moved up to the position of Assistant Manager. Through our own efforts, positive publicity, and consistent high quality of food and customer feedback, we attracted the involvement of outside growth-minded investors. Between 2013 and 2014, I played a key role in opening two additional restaurants from scratch. I was involved in everything from design and layout, determining optimal use and flow of kitchen space, purchasing equipment and supplies, and regulatory inspection and licensing processes, to hiring and training bilingual staffs in all functions and duties performed, purchasing raw materials and producing entire menu for opening, and making the necessary tweaks to ensure continued smooth operation of the business. From 2013-2015, I served as general manager for one of the restaurants. I was responsible for virtually every aspect of managing the business: human resources, basic financial and managerial accounting, reaching and maintaining industry benchmark profitability ratios, establishing systems and procedures to ensure consistency and quality of product and customer experience, inventory management, maintaining relationships with vendors, sourcing raw materials that provided the greatest quality for value, menu and recipe development, developing the offerings and logistical possibilities of our catering services, and the general upkeep, maintenance, and compliance with all regulatory requirements of the business.
