Responsible for supervising research personnel in investigation of isolated soy protein for the Protein Technologies Inc. subsidiary of the Ralston Purina company which focused on developing protein substitution products based upon processed soybeans. Directly supervised two senior research chemists and one research chemists evaluating the health benefits, including protein quality, blood lipid lowering, and iron bioavailability of isolated soy products used for human and animal consumption. • Demonstrated, through animal and human studies that isolated soy protein was equivalent to the protein found in meat, milk and eggs, with respect to human nutritional needs. Used the research results to assist successful corporate efforts to market products with isolated soy protein replacing animal protein. • To combat studies that indicated low iron bioavailability from soy protein, directed a team research project with Protein Technologies and a university that successfully refuted earlier studies and clearly demonstrated that iron bioavailability from soy protein was more than adequate for human needs.• Provided the research support that opened the way for Ralston Purina to produce an isolated soy protein substitute for skim milk in veal calf milk that quickly generated sales revenues of $25 million and launched a new business venture.• Edited and published the “Nutritional Overview” newsletter that achieved an external readership of over 5,000.The newsletter was widely perceived as an authoritative source of nutritional, dietary and food technology information and attracted contributions from highly regarded guest authors.
