Jay Gillespie is a passionate and enterprising bar and restaurant operator with years of experience designing and implementing operational systems, cocktail programs, training platforms, as well as consulting with multiple bars, restaurants and spirit brands. Jay has immersed himself in the hospitality industry for over 30 years, working at all levels of the business. He began his career in the dish pit and worked his way up to become a renowned Los Angeles bartender, restaurant operator and successful business consultant. Jay has worked along side some of the most influential bar and restaurant owners, including nightlife impresario Rande Gerber, Malibu restaurant mogul Bob Morris and industry visionary William Karges. Over the last couple years, Jay has included residential bar, kitchen and spa design to his repertoire.
