Working for the '44 Group' since 2015 where I started as a cocktail bartender in their Cardiff restaurant. Within a year we had secured a reputation for this restaurant as one of the busiest and best in the city. This led to a good involvement with Cardiff Cocktail Club attending spirit competitions, masterclasses and events management all increasing Cardiff's reputation nationally and my own knowledge.Moving to Asador44's opening team in 2017 our focus shifted towards a premium service offering a refined, informal yet attentive approach to fine dining. We quickly rose to prominence in Cardiff securing 'Best Restaurant 2018' Cardiff Life awards. With one of the most carefully curated and extensive Spanish wine lists in the UK I shifted my attention to the wine world. During 2018 I completed my WSET Levels 1/2 (Distinction) and 3 (Merit). I also completed the Cava DO Academy becoming a Cava Sommelier and competed in Copa Jerez, taking 2nd place nationally. We also participated in Rioja Festival 2018 a national competition hosted by Rioja DO where 5 companies competed on sales/marketing strategies and promotional materials. Leading this campaign we took first place as they were especially impressed by our promotional video recreating a famous wine festival 'Battalla de Vino de Haro'. Within my day to day work my role as Assistant Manager meant team training, social media marketing, planning and hosting events including a taster menu with Tim Atkin MW, quarterly Wine Clubs and private functions for the international rugby days. I rotated stock/organised and picked new wines for our list/represented the company at wine events/negotiated with suppliers/determined pricing/wrote cocktail menus and mapped till systems. I was often running the restaurant and our team achieved great feedback from reviews/tripadvisor and customer responses as a result. My time spent with the 44 Group was a joyous experience and has set me up to be excited for the ventures ahead.
