As part of the Brewing Science program I am teaching two courses; BRS111 – Craft Beverage Brewing and BRS211 - Advanced Craft Beverage Brewing. I can't imagine anything more rewarding than teaching a subject I am passionate about to future brewing professionals. I teach students to apply the principles of sanitation and safety, fermentation, technology, manufacturing processes, evaluation/flavor analysis, packaging basics, standard operating procedures (SOP’s), standard laboratory methods of analysis, and key process analytics, while producing multiple batches of beer. The relationships between the properties of malt, hops, water, yeast, equipment controls, and recipe/process design are considered so that students understand the critical control points in the brewing process and learn to produce the highest quality product. Essential components of quality (QA/QC) systems are outlined and the importance of Good Brewing Practices (GBP’s) with regard to biological and physical stability of the finished product are discussed.

I drove process improvements for contract clients and initiated new brand development in the beer, non-alcoholic, and the ready-to-drink beverage spaces. Establishing rigorous food safety protocols, I ensured full CGMP compliance and a culture of quality. I chaired the safety committee, maintaining OSHA 300 logs and conducting hazard analyses. Managing raw materials, I navigated supply chains and negotiated contracts. Leading a 24-7 Ops team, I drove Lean initiatives, implemented autonomous maintenance plans, and tracked KPIs to enhance operational efficiency. I have had the opportunity to deliver high-value engineering projects, including a $15M second production facility.
