Managed and directed all aspects of a commercial and retail bakery operating three bakery-cafe locations and one kitchencommissary in Boulder, Colorado. Spruce Confections serves 85+ wholesale accounts along the front-range, plus 33 Whole Foods Market in the Rocky Mountain Region. Over the course of three years, I drove the company expansion by opening a third bakery cafe as well as a central commissary. • Created and executed a plan to drive company growth by restructuring management, improving operating efficiencies, reducing waste and growing production capacity. • Drove over 50%+ revenue increase during tenure while simultaneously increasing profit margins.• Opened a third retail bakery café location—informing site selection, store design, staffing, training, marketing and ongoing management. • Opened a 2000 square foot kitchen commissary in order to expand production capacity. Informed facility design and oversaw the successful transition into the space. • Successfully built and coached a management team who collectively oversee 70+ staff. • Created a long-term strategic growth plan and executed that plan with the management team. • Oversaw the transition to a UNFI a national distributor for products being carried in Whole Foods. • Initiated a successful company re-branding • Improved internal administrative systems, including HR processes and customer relationship management.
