• Assist in billing - ensure timely and accurate billing of FIT billing, local account billing and catering functions• Create food and beverage maximization by ensuring point of sale system accurately reflects menu price• Review sales contracts to eliminate any functions that may have been discounted from current published pricing• Review banquet and catering checks to ensure all revenues are recorded• Perform various analysis to control food and beverage costs: for example, ensuring optimal processes exist for tracking raw product including purchasing, receiving, storing, issuing, preparation and service• Perform beverage consumption analysis and function cost reports• Performing month end food and beverage inventories, extending various inventories, checking inventory extension accuracy, and ensuring proper food and beverage cost credits are recorded• Generate a daily cash over/short report
