I completed my Bachelor of Agricultural Science at Charles Sturt University in 2020, during my time at CSU I was heavily involved in ICMJ and meat research including completing my honours project at Texas Tech University, looking into the flavour profile of lamb. In 2017 whilst at University I was selected to participate in a program run by MINTRAC which aimed to provide University students with certification to work in meat processing facilities. Upon completing my Certificate IV in Meat Safety Inspection in 2018, I worked as an AAO for Eville and Jones at Teys Wagga Wagga. I remained in this position for approximately two years while finishing my degree. In September 2020, I worked as a Field Technician for MEQ, a start up meat industry research company investigating a technology to measure eating quality and intramuscular fat content in carcasses primarily lamb. In February 2021, the opportunity arose for me to join the team at MINTRAC as a Project Support Officer. Since joining the team at MINTRAC, I have worked on a wide range of projects across numerous areas within red meat processing and livestock production, namely the National Sheep Health Monitoring Project and the DAWE Emergency Animal Disease training package. I have assisted in various other projects covering truck washing protocol, product packaging, WHS and LMO training packages to name a few. In January 2022 I received a promotion to Project Manager within the organisation. Aside from my professional career I have recently become a published author for my first children’s book which is about meat, where it comes from and by products of the meat industry. It is the first book in a series of four I have written to educate the future generation about agriculture and food production our second book about Eggs is due to come out soon. I have also been working closely with an array of teachers to develop free resources for use in the classroom in conjunction with the books covering the subject areas of Science, PDHPE and literacy for years 1 through to 4.
