Taught to run the restaurant line, for plated desserts, and all production related to it, including cakes, tarts, ice cream, milk shakes, etc. Taught to run the breakfast shift, including muffins, pastries, croissants, granola, and bread doughs for banquets, the coffee shop, and the restaurant. Taught production for all banquets, including pate a choux, tarts, cakes and entrements, ice cream, verrines, confections such as pate de fruit, caramels, and honeycomb, macarons. Taught the basics of chocolate work, including bon bons, flavored chocolate bars, ganaches, and chocolate decorations. Learned to work on a team in a production style kitchen, sharing work space and duties effectively. Learned how to be organized, effecient, and stay clean while working in a fast-pace environment. Learned to read banquet orders and prep sheets, and prioritize tasks accordingly.
