I am a high energy professional who works and thinks outside the box with a high degree of professional integrity. Matthew Wilder wrote the song "Break My Stride". In this song there is a line that says, "Nobody's gonna break my stride, nobody's gonna slow me down, Oh no, I've got to keep on moving." This has become my theme song for life. I have shared the speed bumps in my career with many students and peers over the years. After having a class state they lacked the confidence to complete a project, I have started giving students and professionals “Confidence” as part of my business card. My responsibilities as part of the five member corporate foodservice team included maintaining 70 weeks of menus, diet loads, and nutritional analysis; determining the optimal interventions for a broad spectrum of medical needs; ServSafe instructor/ proctor; auditing numerous management and medical nutrition therapy components for regulatory and corporate compliance; provided training to foodservice and medical staff on a variety of medical nutrition therapy and foodservice topics; assisted with development of corporate policies and procedures and RFP.
