I study food, nutrition, and the act of eating.My biggest accomplishment is the conceptualization and pilot of a meal kit for SNAP users. Using community-based research (CBR), I was part of a team who piloted a meal kit that could be purchased with SNAP benefits at a rural grocery store. From preliminary feedback, we created 3 meal-kit recipe prototypes based on price, ingredient list, flavor, and meal-preparation time. After a taste test of the options, community members chose a meal kit that best met their wants and needs. Their preferred kit was piloted at a local grocery store.I have also cooked, a lot and under many circumstances (at home, on the line, with volunteers, as a writer, and in my dreams), which acts as constant inspiration for my work.I hope to continue combining innovation and activism with the goal of using food system development as a tool for change.
