About Mark Reyes

After losing my job during the recession while employed in the Video Game industries as a Quality Assurance Analyst and retiring from the Nightlife Promotions business, I found my passion in Coffee after being employed as a part-time Barista/Coffee Professional for a local cafe.My interests eventually led me to join the SCAA (Specialty Coffee Association of America) as a Barista Guild member and since then, I have learned to become a specialty coffee roaster, barista and business professional. My journey's in coffee has eventually led me to start a Cottage Food Operation called, the House of Wisdom Microroastery - a small batch coffee roasting company - after learning about the California Homemade Food Act which was signed into law on September 12, 2012, which I ran for two years in the highly competitive bay area coffee market before deciding to shutter the business.Besides working as an independent contractor for small companies in coffee consulting, equipment/product sales, media, design and event's planning, I joined Off The Grid Culinary on May 18, 2018 starting as a Barista-Crew Member & Driver on their Red Triangle Coffee+Provisions food truck, in recent months I've learned the inner workings and gained valuable experience in the mobile food industry with goals of one day starting independent food trucks to complement future food businesses I build and invest in.My most recent entrepreneurial interests has lead me towards Esports player management and building a bay area community around the hit game Fortnite due to my son's recent successes in online and offline competitive events leading me to creating the Mavericks Esports Club, aka MEC - which was named after our churches CYO Basketball team that my son played for and I've coached for 6 years. I recently have been able to help my son reach Twitch affiliate status and coached him to be a top 1% player in Fortnite as well as represented and managed his content creation production.

Cafe Manager/Operating Partner

The Early Bird Coffee Co.

Hayward, Ca

After being referred by a personal friend and entrepreneur to a contact of his who was interested in building a coffee bar within his nightclub/bar in downtown hayward, I entered into a partnership and agreed to build out a third wave coffee bar and brand utilizing contacts I have networked and befriended in my past professional experiences within the coffee industry. With financial backing from my new partner, I sourced top of the line espresso and coffee brewing equipment from Primo Espresso Company and local roasted single origin specialty coffee by award winning roasters Devout Coffee in Niles, Fremont. As soon as I completed the cafe build out and established a legal business entity, I operated and built up The Early Bird Coffee Co brand for The Dirty Bird, llc. and was responsible for hiring, creating the coffee bar food & beverage menu, putting operational systems in place, training staff, establishing & building relationships with vendors, ordering & tracking inventory, budgeting, managing payroll, creating content & growing a social media presence, as well as organized events meant to build community around The Early Bird Coffee Co. I decided to leave the partnership after my partner failed to deliver promises he made in agreement within a timely manner.

Barista/Driver

The Whole Cart

Mountain View, Ca

My role within the company started off as a Barista & Driver for The Whole Cart working on the Google owned third wave coffee and toast truck, 'Red Triangle Coffee+Provisions, serving Ritual Coffee.' My responsibilities not only involved making and preparing coffee, toast, pastries and restocking inventory, but also required me to drive equipment and personnel to and from the commissary and service site as well as monitor and assist fleet maintenance with truck upkeep performing pre-flight and post-flight checks. Within my first 3 months, I quickly moved into an unofficial supervisory/support role after the departure of our lead barista/supervisor. During this time, I was responsible at times for filling in as a truck supervisor whenever our only supervisor was out. While acting in the supervisor role, I took the opportunity to improve the quality of coffee by coaching the team on proper standards of operations identifying areas of improvement and teaching skills I learned from my knowledge learned in the SCAA Barista Guild of America while also reiterating lessons learned from Ritual Coffee Roasters training. Besides the responsibilities I already had as a Barista & Driver, I also reported temp logs before service, post service [sales] numbers, and waste numbers whenever I filled in as the truck supervisor. This gave me the opportunity to work more closely with management and gain insight to company operations. My next step within the company is to begin the Instrucktional program as an Entrepreneur creating a food creator concept focused on bringing Filipino-Guamanian street food to the Bay Area foodie community.

Small Business Owner/Cottage Food Operator

House Of Wisdom Microroastery

Union City, Ca

House of Wisdom Microroastery was born out of my curiosity for learning the coffee roasting, product marketing and sales process. After being introduced to roasting coffee from my first Barista job at Kaffa Coffee Roasting Co. and witnessing the owner air roasting coffee beans in his Artisan Fluid Bed coffee roaster, I was inspired to learn how to roast coffee for myself in order to create the best coffee experience for myself and others.Since then, I decided to join the SCAA to educate myself on what makes specialty coffee “specialty.”After joining the SCAA, I learned that specialty coffee is coffee that focuses on quality, consistency, sourcing and its transparency, roasting and brewing methods of every single coffee bean. I took online courses offered up from the SCAA member site teaching me how to source and grade green coffee beans based on when and how it was grown, the differences between natural and washed processing methods, to the art and science of roasting coffee to bring out its peak flavors, to how it’s ground, extracted and brewed. Starting this business is what catapulted me into my passion for making specialty coffee for others to enjoy and creating these experiences for my community.
